Old-Fashioned Sugar Cookies

Ingredients
Makes about 20 (3 1/2-inch) cookies

3 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 3/4 cups granulated sugar

1/4 cup packed light-brown sugar

1 tablespoon finely grated lemon zest, plus 1 tablespoon fresh lemon juice

1 cup unsalted butter, (2 sticks), softened

2 large eggs

Sanding sugar, for sprinkling

Directions

1.Preheat oven to 350 degrees. Sift flour, baking soda, and salt into a bowl; set aside.

2.Put sugars and lemon zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, about 1 minute. Mix in eggs, 1 at a time, and then the lemon juice. Reduce speed; gradually add flour mixture, and mix until just combined.

3.Scoop dough using a 2-inch ice cream scoop; space cookies 2 inches apart on parchment-lined baking sheets. Flatten cookies slightly with a spatula. Sprinkle tops with sanding sugar, then lightly brush with a wet pastry brush; sprinkle with more sanding sugar.

4.Bake cookies until golden, about 15 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to racks using a spatula; let cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.

Sizzling Fajitas

Ingredients

2 tsp olive oil
1/2 red or white onion, sliced
1 red, orange, or green bell pepper, sliced
2 cloves garlic, minced
2 whole chicken breasts, grilled and cut into strips, or 8 oz extra-lean, 95 percent, ground beef
1/2 C salsa
1/4 C nonfat sour cream
4 whole-wheat tortillas, 7"-8" in diameter. Variation: spinach or corn-flour tortillas
1 C shredded low-fat mozzarella cheese


Directions

1. Heat olive oil in a medium skillet. Add onion, pepper, and garlic and saute briefly. Add meat, reduce heat to medium, and saute until no longer pink, about 10 minutes.
 2. Stir in salsa and chili powder to taste. Saute for 5 more minutes.
3. Spread 1 tablespoon sour cream in a thin layer on each tortilla. Divide the meat mixture on top of tortillas, sprinkle each with cheese, wrap, and serve.
4. Makes 4 servings

Ingredients
1 (12-oz.) can frozen pink lemonade concentrate, thawed
4 cups white cranberry juice cocktail
1 qt. club soda, chilled
Garnish: fresh mint sprigs

Preparation
1. Stir together lemonade concentrate and cranberry juice cocktail in a large pitcher. Cover and chill at least 1 hour or up to 24 hours. Stir in club soda just before serving. Garnish, if desired.

Champagne Punch: Substitute 1 (750-milliliter) bottle extra-dry Champagne or sparkling wine and 1/4 cup orange liqueur for club soda; proceed with recipe as directed.

Pecan Cheesecake Pie

Prep: 15 min., Bake: 55 min., Cool: 1 hr.

 Makes 8 servings

Ingredients
1/2 (15-oz.) package refrigerated piecrusts
1 (8-oz.) package cream cheese, softened
4 large eggs, divided
3/4 cup sugar, divided
2 teaspoons vanilla extract, divided
1/4 teaspoon salt
1 1/4 cups chopped pecans
1 cup light corn syrup

Preparation

1. Fit piecrust into a 9-inch pie plate according to package directions. Fold edges under, and crimp.

2. Beat cream cheese, 1 egg, 1/2 cup sugar, 1 tsp. vanilla, and salt at medium speed with an electric mixer until smooth. Pour cream cheese mixture into piecrust; sprinkle evenly with chopped pecans.

3. Whisk together corn syrup and remaining 3 eggs, 1/4 cup sugar, and 1 tsp. vanilla; pour mixture over pecans. Place pie on a baking sheet.

4. Bake at 350° on lowest oven rack 50 to 55 minutes or until pie is set. Cool on a wire rack 1 hour or until completely cool. Serve immediately, or cover and chill up to 2 days.

Flaky Apple Pie

Ingredients:

Pastry for 2 crusts (recipe below)
7 cups sliced, peeled baking apples (Granny Smith or Jonathan work best)
2 tablespoons lemon juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter
1 egg yolk1 tablespoon water

Directions:


1. In a large bowl, toss the sliced apples with lemon juice.
2. Combine sugars, flour, cinnamon and nutmeg; add to apples and toss well to coat.
3. Fill pastry lined 9 inch pie pan with apple mixture. Dot with butter.
4. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or by hand.
5. In a small bowl, beat the egg yolk and water. Brush mixture over top crust.
6. Bake at 425 degrees for 15 minutes.
7. Reduce heat to 350 degrees and bake 40-45 minutes more or until crust is golden and filling is bubbly.


Flaky Pastry Pie Crust Recipe
Makes two 9-inch pie crusts

Ingredients:

2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup butter, chilled and diced
1/2 cup ice water

Directions:

1. Combine the flour and salt in a large bowl.
2. Cut in the butter until the mixture resembles coarse crumbs.
3. Stir in the ice water, a Tablespoon at a time, until the crust mixture forms a ball.
4. Wrap dough in plastic wrap and refrigerate for 4 hours or overnight.
5. Sprinkle flour onto rolling surface. Roll dough out, then divide in half. Roll each half to fit a 9-inch pie plate.
6. Place crust in pie plate, pressing evenly into the bottom and sides.

1 (3 pound) whole broiler-fryer chicken
1 tablespoon butter, melted
4 medium red potatoes, quartered
2 cups fresh or frozen whole baby carrots
2 stalks celery, cut into 2-inch pieces
12 small white onions, peeled
1 1/2 teaspoons chopped fresh rosemary leaves
1 cup Swanson® Chicken Stock
1/2 cup orange juice

Directions

1.Brush the chicken with the butter. Place the chicken and vegetables into a roasting pan. Season with the rosemary. Mix the stock and orange juice in a small bowl and pour half the stock mixture over the chicken and vegetables.

2.Roast at 375 degrees F for 45 minutes.

3.Stir the vegetables. Add the remaining stock mixture to the pan. Roast for 30 minutes or until the chicken is cooked through.

2.In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.

3.Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Ingredients:

3 tablespoons oil
1 tablespoon reduced sodium soy sauce
1 tablespoon McCormick® Salt Free Garlic & Herb Seasoning or 1 tablespoon McCormick® Perfect Pinch® Salt Free Garlic & Herb Seasoning
1 pound boneless beef sirloin steak (about 1-inch thick)

Directions:
 1. Mix oil, soy sauce and Seasoning in small bowl.
                                                                             
 Place steak in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
2. Refrigerate 30 minutes or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade.
3. Grill over medium-high heat 6 to 8 minutes per side or until desired doneness.
